Yellow Rice
Ingredients
● 2 cups Basmati rice
● 3 cups boiling water
● 1 onion chopped finely
● ½ tsp turmeric powder
● 5 peppercorns
● 5 cardamom pods gently bruised
● 6 cloves
● 1 tablespoon ghee
● Salt to taste
Preparation
1. Wash the rice thoroughly
2. Heat the oil and fry the onions until softened
3. Add the spices, fry for 2 minutes
4. Add the washed rice, continue to fry on a low heat, covering the rice completely with the spice mix
5. Add 3 cups of boiling water, add the salt
6. Bring to boil, reduce heat and continue to cook until the water has almost disappeared. Take off the heat and allow to sit for 10 minutes with the lid on.
7. Garnish with fresh in-season greens
8. Serve with your favourite curry (try my Vegetable Dahl)
